Overview: 

The food safety landscape is changing and this presents a litany of challenges. Micro biological issues of food safety have historically been considered the result of inadvertent contamination. Intentional contamination or adulteration of food is, however, also a reality.  Traditional HACCP programs are designed to enhance food safety by addressing the risk of inadvertent contamination of food during production and processing. Mitigating the intentional contamination of food requires an approach beyond HACCP.  Thwarting food bio-terrorism is critical to minimizing not only the health risk This webinar will address the complexity of defining safe food and examine the factors that impact on microbiological food safety. We will look at the changing nature of food borne/food transmitted pathogens and the influence of demographics and geography on the changing landscape. The webinar will also discuss the roles and responsibilities that each of us must play to mitigate food contamination and food borne illness.
